The Munich-born chef Bobby Bräuer, who trained under Witzigmann, has already cooked with his Michelin star in Munich, Düsseldorf and Berlin and is now seducing guests with his classic French cuisine with a Mediterranean influence. He places a great deal of importance on regional products with an unbeatable freshness and flavour - especially in Tyrol. Bräuer places the main product at the centre of his work. Flavours, spices and new combinations then result in captivating new dishes which “unfold a delicious flavour”, as one well-known German gourmet critic put it.
