Cheese Dumplings

Dive into the world of traditional farmers’ cuisine and conjure up one of the most popular dishes of Tirol, pressed cheese dumplings!

Ingredients for 4 persons

  • 1/2 kg of dumpling bread
  • 1/4 l of warm milk
  • 3 eggs
  • 1 onion
  • 300 g of grated cheese (mountain cheese, grey cheese, gouda, beer cheese)
  • salt, caraway, pepper
  • 1 small bunch of parsley
  • clarified butter for roasting

Preparation

Put the dumpling bread into a bowl and add the warm milk and the eggs.

Chop the onion into small cubicles and roast them in some butter.

Add the roasted onions (not too hot) to the dumpling mixture and season it. Chop the parsley, grate the cheese and knead it into the dumpling mass. Let the dough rest and rise for about 10 minutes. Form dumplings, flatten them and roast on both sides until they turn gold-brown. Put on some kitchen roll to drain. Serve the dumplings in a beef bouillon and with a crisp green salad or coleslaw just like in Tirolean guesthouses.
