"Frittaten" Soup (clear soup with strips of pancake)
“Frittaten” Soup is popular as a starter in Tirolean guesthouses and at home. Its preparation is easy and fast.
Ingredients for 4 persons:
- ¾ l of beef bouillon (vegetable soup for vegetarians)
- 2 eggs
- 60 g pastry flour
- 1 teaspoon of salt
- oil for frying
Preparation
Whisk eggs, milk, flour and salt to a smooth dough and let rise for 15 minutes. Chop the chives. Bake 4-5 think pancakes in the pan. Roll up the pancakes and cut them into thin strips. Put a quarter of the strips into each soup bowl and pour hot soup over it. Serve this homemade soup with chives. Now the typical homemade “Frittaten” soup is ready to eat!
