Veal liver with sage apple and puree

The liver melts in your mouth, its delicate texture harmonizing with the sage. How it works:
Fry the fresh, local calf's liver in butter until hot and spicy, season with maldon salt and sage. Then add the apple slices steamed with turmeric spice and deglaze with selfmade pepper sauce. The Eggerwirt recommends a creamy mashed potato as a side dish.
