Stewed watermelon with pickled mushrooms | mushroom broth and mountain herbs

Delicate watermelon meets marinated mushrooms, surrounded by fragrant mushroom broth and invigorating mountain herbs. A culinary symphony of sweetness, heartiness and freshness.

Entrust your palate to the former youngest star chef Jürgen Kleinhappl, head chef Alexander Knelle and his team and expand your culinary horizons. Regionality, seasonal produce and above all products from sustainable production inspire the Neuwirt's cuisine. Traditional is implemented with the best products. The team uses its full knowledge and years of experience in Austria's top gastronomy.

How it works:

Peel the watermelon with a knife to have the red pulp. Then stew the melon at 80 degrees for at least 12 hours. Once the liquid begins to caramelize, the melon is ready. Allow to cool and vacuum seal, as this intensifies the flavor even more. Clean mushrooms of your choice, chanterelles or beech mushrooms are recommended. Lightly caramelize mirin and sugar and then add the remaining ingredients, reduce slightly and pour hot over the mushrooms. For the mushroom broth, vacuum mushrooms and salt together and then steam at 100 degrees for at least 2 hours. Strain the broth and dilute with water if it is too salty. Pick your preferred herbs from the garden or meadow. For example: chervil, chervil, chives, chervil, parsley, chervil, tarragon etc. To serve, arrange the watermelon in finely cut slices in a circle on a deep plate, place the mushrooms and herbs on top, finally pour some of the mushroom broth.
